My 1st Blogiversary + Watermelon Cake Recipe!

So today is C it Nutritionally’s unofficial-official 1st blogiversary!
I’ve personally learned SO much (never thought I would have a website to call my own!) and have grown not only as a graduate student (another year under my belt and ready to start a new school year next week!), but as a blogger, entrepreneur, and cook! C it Nutritionally has evolved many times over during the past twelve months, making every ebb and flow worth it!
To celebrate, I created a 100% RD-2-be-approved blogiversary cake made out of WATERMELON! Before the season’s over, be sure to make this FUN and CREATIVE work of fruit-art…scroll down for instructions!
But first, let’s reflect on C it Nutritionally’s first year…Here are some highlights:

A month after C it Nutritionally was born, I was invited to become a Meatless Monday Blogger on Board! You can check out the amazing work of so many bloggers on this Pinterest board!

I was gifted a totally awesome camera for my 25th birthday! {Thanks Mom & Dad!!!} Two months later (with ZERO prior photography experience) I got my first photo accepted into Foodgawker!

probablydefinitely happen again with an entire website overhaul within the next year!

I started C it Nutritionally to share research, healthier recipes, and an outlet for me to write while in graduate school for my future career as an R.D. (Registered Dietitian). Whether thousands of people read daily or no one does, I honestly just love having my own voice to debunk myths and reduce the nutrition clutter I read on a daily basis…plus share the gazillions of ideas that pop into my head!
I’m SO unbelievably proud of the thousands of baby steps we have taken over the past 365 days (and I say WE because C it Nutritionally would be no where without it’s loyal readers!!!).

Surprise guests with this watermelon cake at your next party!
No bake, but assembly IS required!
Simply cut off the ends of your watermelon so it can sit flat on your working surface.
Using a sharp, serrated knife, carefully remove the rind. {Carefully being the KEY word!}
Smooth out edges with your knife to form a cake-like cylinder.
Due to the slippery surface of watermelon (and most fruits — feel free to use a cantaloupe or honeydew to make this cake), icing has trouble adhering. To solve this problem, and lower your sugar intake, get creative with your favorite fruits and toothpicks.
I used grapes and berries for my 1st blogiversary celebration!
