It’s been quite some time since I traded in turkey, mashed taters and jellied cranberry sauce for hearty fall salads, fresh cranberry relish and sooo many roasted veggies, BUT that doesn’t mean the world’s biggest food holiday rolls by without a thought. It’s still one of my favorites!

As I shared earlier, this year is the last Thanksgiving in my childhood home, and although it’s sad, I cannot wait for a few days of just family at home. <3

But, first…FOOD! 

Because I don’t know about you, but I did some MAJOR menu planning this past weekend curled up on my couch with hot cocoa because it was finallllly chilly out (my favorite weather!).

So here are 50 last minute vegetarian Thanksgiving recipes — appetizers, soups, salads, side dishes, veggie-filled mains, desserts and some cocktails — many of which…
