What I Ate Wednesday 34

Heyy yoooo hey yoo hey yooo heyyy yooooo…because sometimes I like to pretend I’m in Pitch Perfect and sing like an angel (which if you know me, you know is FAR from the truth!). But anywhoooo…I’m working from home most of this week writing blogs, refining presentations for the next Culinary Nutrition certificate program at NGI, and testing recipes (have you ever worked with Kamut?!) and I’m absolutely LOVING it! Working from home is my dream (hands in the air like you just don’t care!) because I don’t have to pack allll my food and snacks and lug them across the city to work and I can stay in my pajamas all day! Oooohh the small things in life…

So I woke up at my usual 7am with some fruit, sunflower seed butter and pumpkin seeds and caffeinated! I got a new planner (above) and CANNOT wait to fill it on up and plan, plan, plan! Does anyone else get SO excited about a brand new planner….back to school season is a cominnnn’!

I took a break from my work to make a fresh batch of sunflower seed butter (new flavor — coming soon!!) so I snacked on about half of my apple I used for some pictures and had plenty of samples…ya know, to make sure it was juuuusttt right 😉

And yes, I wore my pajamas nearly all day!

For lunch, I was craving tuna so I DIY’d and made my Tuna Avocado Salad with a dollop of Sir Kensington’s mayo (SO GOOD!). I ate it over a humungo salad made with an arugula and spinach blend, fresh tomatoes, some of the apple from above, and roasted carrots.

Yup, still in pajamas! 

A few hours later I was ready for a snack, so I gulped down a glass of water, ate more of the apple from above with my new sunflower seed butter and some extra roasted carrots I had. They’re like candy…SO good!

An hour later, I signed up for a dance cardio class last minute, so I ate half of a naner before I left for the class…

And then I changed out of my pajamas!

I danced my butt off for 55 minutes in an oh so hard class, chugged 2 glasses of water when I got home, and then collapsed for a few minutes…literally.

But still smiling from all of those endorphins 🙂

I whipped up a fancy-ish dinner for S and myself…

…salad bowls with allll the good stuff…Arugula/spinach blend in balsamic vinegar, farmers market fresh tomatoes, bell pepper strips from my preceptor’s garden, quinoa, homemade shiitake bacon (my new OBSESSION…want me to share the recipe?!), avocado and a few seared shrimp!

People often ask how I cook for both of us, and it’s simple…I make the same thing, but give S more (or add an extra protein if I’m making myself a veggie-only meal!).

After dins, we watched the Olympics (U-S-A! U-S-A!) and I cut up our new watermelon and snacked on a bunch as I went…

Not the prettiest picture, but I am obsessed with these bowls because they come with lids, so they’re great to serve AND store!

I prepped S’s brekkie and lunch for tomorrow and snacked on a few bites of leftover tuna salad (not pictured) along the way before bed. Weird — I know — but I’m listening to my body!!

And it was off to bed…til next week!

  1. So many healthy, yummy snacks and that seared shrimp bowl looked awesome! If I worked from home, I would NEVER change out of my jammies 🙂
