Maaaaa! THE MEATLOAF!!!!

OK, so my son can’t quite call out to me just yet… but it’s coming!

Now that my 18 month old is consistently eating real meals, I’ve been searching for our family favorites. I asked my mom what our family’s go-to meals were when I was younger, and she mentioned MEATLOAF! 

She said meatloaf is quick, easy, a family favorite, and a no brainer to make, so I knew I had to add it to my repertoire!

I also wanted to make an allergy-friendly turkey meatloaf recipe, so that’s how I developed this Grain Free Healthy Turkey Meatloaf.

Sheet Pan Healthy Turkey Meatloaf is a full meal made with only 10 minutes hands-on time! Here’s how…

This grain free turkey meatloaf takes just 10 minutes of hands-on time!

In a large bowl, first toss the green beans with olive oil, salt and pepper. Distribute on a large baking sheet.

Then, finely shred the potato. I use a box shredder like this. The key is to make sure you squeeze the water out. Once you squeeze the water out of the potato, then measure 3/4 cup!

In the same bowl you used for the green beans (see, easy clean up!), mix together ground turkey, shredded potato, scallions, parsley, and spices.

Form the ground turkey mixture into a freestanding log-like structure – you’ll place this in the middle of the sheet pan. It will be about 4 x 7-inches, and 3-inches in height.

Spread ketchup on top and now it’s hands-free time! Bake the meatloaf and veggies for 30 minutes, then add additional ketchup for the final 10 minutes.

Voila! Dinner is done!

Ingredient Substitutions for this easy turkey meatloaf recipe

Instead of…

  • Ground turkey –> you can use ground beef, bison, or chicken
  • Potato –> you can use sweet potato
  • Green beans –> any veggies that cook in about 30-40 minutes (I’ve used potatoes, zucchini, radishes, onions, and more)

This Sheet Pan Healthy Turkey Meatloaf is nearly a complete meal… but you may find you need a little something extra.

What’s a balanced meal?

It’s one that contains protein, veggies, carbs, and fats. Let’s check in…

  • Protein: ground turkey
  • Veggies: green beans
  • Carbs: potato
  • Fats: oil

So yes, all components are here… BUT, since there’s only 3/4 cup shredded potato, it’s not all that much carbs per serving. I happened to have some extra roasted potatoes, so I added those to my plate to make this a better-rounded plate (as you can see above).

Recipe note: If you add potatoes to the green beans, be sure to cut into about 1/2-inch cubes!

Ingredients

  • 24 oz green beans
  • 2 tablespoons olive oil 
  • ½ teaspoon salt, divided
  • ½ teaspoon black pepper, divided
  • 1 pound ground turkey 
  • 3/4 cup finely shredded potato or sweet potato, excess water squeezed out
  • 2 scallions, chopped
  • ¼ cup chopped parsley
  • 2 teaspoons dried oregano
  • 1 1/2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • ¼ cup ketchup, divided

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with tin foil or parchment paper and set aside.
  2. In a large bowl toss together green beans with olive oil and ¼ teaspoon each salt and black pepper. Transfer green beans to the sheet pan, leaving space in the center for the meatloaf.
  3. In a large bowl mix together ground turkey, shredded potato, scallions, parsley, oregano, garlic powder, dried thyme, smoked paprika, and remaining ¼ teaspoon each salt and pepper. 
  4. Form meatloaf into a loaf-sized log, about 4 x 7-inches. Top with 2 tablespoons ketchup.
  5. Bake for 30 minutes. Remove from the oven and add additional 2 tablespoons ketchup on top. Return to bake for another 10 minutes, or until meatloaf reaches 165°F. Serve warm. Enjoy!
