If there was a holiday created for me I’m pretty sure it’s Cinco de Mayo. I mean, who doesn’t LOVE Mexican food? (If you’re raising your hand, this probably isn’t the post for you!)

Mexican food is my FAVORITE! Here’s why, it’s…

One part of any fiesta I automatically put myself in charge of is the GUACAMOLE. Good guacamole is a skill, my friends. And it’s a skill I excel at. #humblebrag

The key to the most amazing guacamole? FILL IT UP!

I love a traditional avocado, lime juice, salt, cilantro combo, but I have to say, adding the GOOD STUFF amplifies the flavor like WOAH!

That’s why I’m a super fan of this Corn and Black Bean Guacamole…

Guacamole and crudites

Loaded with corn, black beans, cilantro, a hint of lime juice, and some pantry-staple spices, it HITS. THE. SPOT. What else do you need?! It’s LOADED with flavor. It’s LOADED with nutrition.

And yes, it’s actually a BALANCED dip.

Is Corn and Black Bean Guacamole healthy?

YES! It fits my PVCF formula for a balanced snack:

Protein: Black beans are a great source of plant-based protein.

Veggies: Use crudités to dip! (OK, this one was a stretch, but not by too much!)

Carbs: Corn is a starchy carb that’s satisfying

Fat: Avocado – my favorite kinda fat!

When you combine these nutrients, your blood sugar is stable, your energy peaks, and you’ll FEEL GREAT!

Plus, it’s made from WHOLE FOOD ingredients. Many of the ingredients included contain multiple nutrients.

Ingredients in this chunky guacamole:

Avocados: The star of any guacamole has got to be avocados. Avocados are full of monounsaturated (heart-healthy) fats, but also fiber and micronutrients, including vitamin C, potassium, and magnesium.

Black Beans: Black beans may be one of my favorite canned foods. I mean, they can go from dinner to dessert with the use of a blender – how cool is that? But they’re also full of plant-based protein, filling fiber, iron, and more. I always have a few cans of black beans in my pantry!

Corn: Corn wouldn’t be in the title if it wasn’t important! Corn gets a bad rap sometimes because it’s a starchy carb, but if you’ve been around here for a while, you know WE NEED CARBS! I do prefer to use organic corn, when possible because a lot of the corn crops in the U.S. are GMOs.

Lime Juice: Guacamole needs lime juice. There, I said it. If you’re not adding a squeeze of lime (aka ACID) to your guac, it’s one-dimensional. Add dimension, people and add the lime!

How to use this healthy guacamole:

Guacamole is so versatile. That’s probably why I love it! Adding a dollop on top of your favorite Mexican food just makes your meals THAT much better.

Here are some of my other favorite uses for this guacamole:

  • Dip with veggies at snack time
  • Add to your lunch box with tortilla chips
  • Smother on a sandwich
  • Slap it onto tacos
  • Use it over enchiladas for a cool contract to a spicy sauce

Corn and Black Bean Guacamole

Ingredients

Scale
  • 1 medium avocado, pit removed and flesh scooped out
  • 3/4 cup corn, fresh or frozen and thawed
  • 1/2 cup canned black beans, drained and rinsed well
  • Juice from 1/2 lime
  • 1/8 teaspoon salt
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon chili powder
  • 1 tablespoon roughly chopped cilantro

Instructions

  1. In a small bowl, mash avocado with a fork until some chunks still remain.
  2. Add the remaining ingredients and mix to combine.
  3. Serve immediately or cover, refrigerate, and enjoy within 1-2 hours.

Serving suggestion: Serve with your favorite crudités or chips.

  1. Girl that guacamole looks so good!!! Cinco de Mayo just so happens to be my birthday too so I’ve always had a soft spot for the day, besides the fact that a holiday centered around margaritas….yes please!
