Sometimes it’s the little things in life that get me excited, like it being February 29th

…or these Oatmeal Raisin Cookie Energy Bites!

Since it’s a once in a four years kinda day, I guess, after all, it’s not SUCH a little thing…especially for leap year babies – HAPPY BIRTHDAY! But then again, the HUGE flavor in these Energy Bites isn’t such a little thing either!

So when I was invited to my brother’s for Sunday night dinner a few weeks ago, I wanted to bring a healthier dessert and I knew there would be tons of food anyways. My brother happens to love oatmeal raisin cookies, so I figured I’d experiment and whip up a good-for-you, tastes like an oatmeal raisin cookie treat.

So I say if it tastes like an oatmeal raisin cookie, kinda sorta looks like an oatmeal raisin cookie (before they’re baked), and feels like a chewy oatmeal raisin cookie in your mouth…I think we’re good to say these bites are as close as ya get to an oatmeal raisin cookie…without the added sugar, butter, and not as good for you stuff!

Oatmeal Raisin Cookie Energy Bites {no added sugar!}

A naturally sweet, oaty, and dotted with chewy raisins, these Oatmeal Raisin Cookie Energy Bites are the perfect afterschool snack, pre-workout munch, or satisfying dessert!

Ingredients

Scale
  • 4 medjool dates
  • ¾ cup rolled oats, divided (certified gluten free, if needed)
  • ¼ cup sunflower seed butter (or peanut/almond butter)
  • 3 tablespoons raisins, divided
  • 2 tablespoons chia seeds
  • ¼ teaspoon ground cinnamon
  • Pinch of sea salt

Instructions

  1. Soak dates in water if dates are not soft/fresh.
  2. Place ½ cup rolled oats, sunflower seed butter, dates, 2 tablespoons raisins, chia seeds, cinnamon and salt in a food processor. Process until mixture comes together in a ball. Batter will be sticky, but workable.
  3. Remove from the food processor and transfer to a small bowl. Add additional ¼ cup oats and tablespoon of raisins.
  4. Form into 10 one-inch balls. Store in the refrigerator.
