Fall is by far my favorite time of the year…leather jacket weather, crisp air, apple picking and everything pumpkin spiced. But if we’re being 100% honest over here (which I always am!), Halloween is definitely not a part of that list! To me, finding a costume is possibly more stressful than my RD exam was. No joke.

BUT my mama always got into the holiday spirit when I was younger and I have the absolute best memories of dressing up and going trick or treating with my siblings.

When we came home with overflowing bags of candy, we would dump it all on the floor, sort it, and then the great Amer family trade would occur. I kid you not…the intensity was palpable! My older brother doesn’t like chocolate, I’m allergic to nuts, and my younger brother was a chocolate fiend. Game on. And then after a couple of days the candy magically disappeared…hmmmmmm…

So now that I’m making my own Halloween traditions, I’m getting into the Halloween spirit my way...in the kitchen!

These black bean “eyeballs” are SO easy to make. You legit throw every ingredient into the food processor, pulse, and roll into balls. Then bake and voila! You can also enjoy them a top spooky spaghetti strands or even the next day in a salad (not so spooky).

Spooky Black Bean Eyeball Subs

Get your Meatless Monday dinner in the Halloween spirit with these Spooky Black Bean Eyeball Subs made with tender black bean “eyeballs,” prepared in less than 45 minutes! Vegan. Gluten free.

  • Prep Time: 10 minutes
  • Cook Time: 30 minutes
  • Total Time: 40 minutes
  • Yield: 12 balls 1x

Ingredients

Scale
  • 1 15 oz cans black beans, drained and rinsed very well
  • 2 cloves garlic
  • 2 tablespoons ground flaxseed meal
  • 1/4 cup ketchup
  • 1/2 teaspoon black pepper
  • 2 teaspoons no salt added Italian seasoning
  • 1/4 cup quick oats
  • 2 cups store-bought marinara sauce
  • 4 whole grain hot dog buns or hero rolls
  • 1 zucchini, spiralized, or cut into very thin strips
  • 4 olives, thinly sliced
  • 4 bocconcini mozzarella balls
  • 8 capers

Instructions

  1. Preheat oven to 350°F.
  2. In a food processor or high powered blender, combine black beans, garlic, ground flaxseed meal, ketchup, and spices. Pulse until well combined. Then add oats and pulse a few more times, until just combined.
  3. Remove this batter from processor and form into about 12 1 1/4 inch balls, with about 2 tablespoons of batter for each ball.
  4. Bake for 15 minutes, then turn gently and bake for an additional 15 minutes, until the exterior is golden brown.
  5. Then, in a medium skillet over low heat, warm marinara sauce and add bean balls. Once sauce is heated through, assemble subs with spiralized zucchini and additional marinara sauce.
  6. To make “eyeballs”, layer sliced bocconcini and olives and place a caper in the center to resemble eyeballs. Enjoy immediately!
