What I Ate Wednesday 45

Hiiiii friends!

Is anyone else in a day after your birthday hangover?! I felt SO incredibly loved by all of you and my family and friends yesterday that while I’ve been drowning in work, I still had alllllll the loving feels!

So I’m just going to jump into the eats because I had a delicious day of very random acts of eating at times (last Wednesday). You guys may have seen some of this deliciousness if you follow me over on Instagram ((whatcha waiting for…more eats…all the time!!)), but I think they’re just as good a second time around! And I forgot to photograph another day of my eating this week because I was tre busy!

Let’s just jump right into it…

I don’t know if it’s winter or because I was working later or what, but I couldn’t seem to wake myself up last week and got up on the later side (like 745-8ish!) and having MUCH more leisurely mornings. While this is well and good for my slow as molasses morning self, my kick it into high gear type A self wants to light a fire under my booty some days. Be as it will. I’m STILL on my smoothie kick and this happened to be a smoothie kind of day…. ((see pic above))…


I made a version of my green cocoa smoothie bowl in my Vitamix → 1/3 of a frozen banana, a little less than 1/4 of an avocado, 1/2 to a whole tablespoon of sunflower seed butter, about half of a bag of organic spinach (or like 3 monster overflowing cups), 1/4ish cup of unsweetened soy milk, a little less than 1 tablespoon ground flaxseed and 1-2 teaspoons unsweetened cocoa powder. Blend and voila! Then I top it with allllll the good stuff — pear, pom seeds, blackberries, clem slices, chia seeds, sunflower seeds, and my ohemgee brown rice cacao crisps from One Degree Organics. HOLY YUM!

I got a ton of work done in the morning and had a lunch date planned with a bunch of other health and wellness focused girls (see more about that here!), so I headed uptown early to run some errands (ie: return the 3 pairs of shoes I ordered for a wedding last weekend that didn’t fit!).

We had lunch at Le Botaniste — a great vegan/plant based spot in midtown. I got the veggie tagine bowl and it was DELISH. So much flavor in all of the veggies. And that beet kraut — MMMMM!

But to be totally honest, as someone so allergic to nuts, eating at vegan places freaks me out a little on the inside. SO much vegan, gluten free, trendy food is made with nuts so I have to be SO careful, and always ((kinda)) feel like I’m taking my life into my own hands. But I really wanted to try this place and everything had a different spoon which made me feel better that clean practices were being followed!

I digress…

We sat at lunch for a few hours so I couldn’t believe how much time flew by! It’s so great collaborating with others in a similar space. If anyone is in the New York area and wants to meet up, puuhhh-leaseee reach out – I’d love to hear from you!

It got so cold by the time I left, but I walked around for almost half of the way home to get in some extra steps because I totally did not have time to workout today. I was ready for a snack (shocking!) by the time I got home…

I made myself a smorgasbord of stuff — two mini sweet tater toasts with hummus, a bunch of ants on a log (celery + SSB + raisins) and some popcorn.

I did some more work for the rest of the evening (booooring!) and sipped on more water because I was feeling a tad under hydrated.

Dinner time rolled around and I threw together a bunch of leftovers because S wasn’t home (and he’s not a fan of leftovers!)…

Some salmon, leftover eggplant sauce we ate the night before over spaghetti squash, stir fried cabbage and zucc, sliced cukes with hummus and mustard and salmon. I ate all my veggies first (I’m like a 5 year old sometimes who’s told to eat their veggies!) and got a tad turned off by the salmon, so I only wound up eating a few bites of that.

A little while later I ate another crispy chocolate sunflower seed butta cup because WHY NOT?!

And I called it a night!
