What I Ate Wednesday 31

Guys, we made it!!

It’s the last week of my clinical rotations of my dietetic internship and I am SO ready to be done! I gave my last presentation yesterday (whew!… On the nutrition recommendations of cystic fibrosis, in case you’re wondering!), and I’m finishing up staff relief. Since my days are busy (because whose aren’t??), I packed my day full of nutritious goodness…

Because you know what they say… Prior preparation prevents piss poor performance! 😉 

Anyways, let’s get to the EATS! It’s the last brekkie of chia pudding I’ll eat while reviewing charts in the morning….

But don’t worry, my obsession with chia pudding isn’t going anywhere! 

After seeing a bunch of patients all morning, it was time for the last hospital lunch you’ll see me eat (are you tired of seeing the same salad every week?)...

Today was kale and mixed greens with quinoa, carrots and tomatoes.

I had a crazy busy day seeing a gazillion patients and I felt like my head was spinning all day, but I stopped for some snacks throughout the afternoon (pictured above)…

Cherries and grapes with pepitas and sunflower seeds and then an hour later half of a sweet tater with sunflower seed butter. Gotta #practicewhathupreach and combine fiber + protein!

I left work around 6:15, walked home and had some errands on the way and was cravvvving lemonade, so I picked up a lemonade vitamin water zero.

I’m really NOT a fan of artificial sweeteners, but every once in a while, c’est la vie! 

I made dins: a skinny girl moo shoo — a take on my stir fry with shredded cabbage, zucchini and peppers with a ton of spices and soy sauce — and threw in a few shrimp and topped it with some seeds for a crunch and protein (I was really missing my crunchy edamame!).

After (and while) reviewing my presentation I finished up our fifth million batch of salted chocolate nice cream. And yes, it’s still even better with a sunflower seed butter swirl 🙂 And sprinkles for good looks!

And then it was time for bed! Only 2 more days of abbbsolutely necessary 5:45am wake ups before the hospital! Weeeeeee 🙂 Til next week…
