Peach Pie Egg Rolls

A sweet take on a savory classic, these peach pie egg rolls are the sweet filling of your favorite peach pie rolled up in a cinnamon and sugar coated crispy shell!

Lettuce talk about food holidays today. I bat my eyes at most food holidays because, well, they’re made up and if I celebrated every one then this blog would only be about food holidays. Although that would be awesome, I have way too much fun talking about nutrition and becoming a dietitian and fitness and recipes that don’t fit into specific food holidays. 

But today is National Peach Pie Day. And there’s nothing quite better than peach pie in the summer. 

Sometimes I wish I lived down south so I could enjoy those Georgia peaches more often. No, I’ve never been to Georgia. Are the peaches really that much better there???

Everyone always talks about how much they love summer. And, well, now that summer is almost over I can say hallelujah! I just don’t love summer that much. I mean, that heat and humidity?! No thank you! But I tolerate the season for the food. There’s no better season food-wise than summer…heirloom tomatoes, sweet string beans and corn you can eat raw, and those juicy, drip down your face, peaches. 

And when there’s an abundance of peaches, the best thing to do with them is make a pie! Well, I’m more of a crumble type of person, but still, mmmmm. Can’t you just smell the cinnamon and hint of ginger and the sweet from the farm peaches caramelizing on their own in the oven?!

Well, another thing I love that’s a bit less seasonal…egg roll wrappers! 

When I first used egg roll wrappers I instantly fell in love. While normally I don’t love foods that can be described as bland or dry, their honestly boring flavor makes them a great canvas for any filling…

Peach Pie Egg Rolls

A sweet take on a savory classic, these peach pie egg rolls are the sweet filling of your favorite peach pie rolled up in a cinnamon and sugar coated crispy shell.
Ingredients
  • 2 cups peaches, sliced
  • 2 tablespoons ground flaxseed
  • 2 tablespoons coconut sugar
  • ½ teaspoon cinnamon
  • Pinch ground ginger
  • Pinch sea salt
  • ½ teaspoon vanilla
  • Juice from ¼ lemon
  • 1 teaspoon coconut oil
  • Egg roll wrappers (found in the refrigerated section)
Instructions
  1. Preheat oven to 350°F.
  2. In a medium-sized bowl combine all ingredients, except for the egg roll wrappers. Make sure the peaches are evenly coated with the flaxseed, spices, and oil.
  3. Place an egg roll wrapper on a flat surface. Spoon some of the peach mixture to the middle of the egg roll wrapper. Fold two opposite corners in towards the middle and roll the egg roll, like you would roll a wrap or burrito. Place seam side down on a parchment paper lined baking sheet.
  4. In a small bowl combine egg white with an equal amount of water. Gently beat the egg white to combine. Brush the top of the egg roll with egg wash. Sprinkle the top of the egg roll with cinnamon and sugar.
  5. Bake for approximately 20-23 minutes, until exterior is golden brown and crispy. Serve immediately!

  3. This is such a smart idea!! Almost like a peach cobbler but more neat and tidy. I love egg rolls – coming from an Asian family I had them alllll the time growing up. But never in a sweet version
