Rainbow Raspberry Salad

I promised I would share this simple and classy Rainbow Raspberry lunch salad earlier this week so I’m living up to my commitment!

Honestly, there’s not much to this one! (It’s all about presentation!)

Step 1: Choose the veggies you adore most! 

Step 2: Add a vegetable you don’t usually go for. Variety is KEY to a healthy diet! Try jicama, radishes, celery, etc…you get the picture!

[Note: I use the term “diet” to describe what you eat, not a fad/quick fix plan.]

Step 3: Top with RASPBERRIES — a sweet addition that makes your ho-hum salad ornate, luxurious, and worthy of your consumption!

Step 4: Finish with my lip-smacking dressing…it’s tangy, but not sour, so it complements the salad perfectly! 😉

Rainbow Raspberry Salad

A looker for your eyes, but just as delicious for your taste buds…& healthy! Fill up with this tangy, sweet, and satisfying lunch.
Ingredients
  • Dressing Ingredients:
  • ½ cup olive oil
  • 2 tbsp honey
  • ¼ cup red wine vinegar or apple cider vinegar
  • 1 clove of minced garlic
  • ¼ tsp salt
  • ¼ tsp paprika
  • 1/8 tsp black pepper
  • 1/8 tsp oregano
  • Salad Ingredients (flexible…use what you have on hand!)
  • 5 cups mixed greens
  • 1 cup cucumbers, chopped (I used the small peruvian cucs)
  • ½ cup tomatoes (any variety), chopped
  • ½ cup bell pepper, chopped (& try roasted bell pepper too!)
  • ¼ cup non-typical salad veggie, chopped (Ex: Celery, Jicama, Radishes, Beets, Sweet Potatoes)
  • ¼ cup onion, finely chopped
  • ½ cup edamame, shelled
  • ½ cup raspberries
  • 2 tbsp spicy roasted pepitas (recipe here: http://chelseyamernutrition.com/spicy-roasted-pepitas/)
  • 1 cup grain of choice (I used a mixture of quinoa and farro)
  • Optional: ¼ cup shredded cheese (of choice)
Instructions
  1. In a small bowl, or mason jar, combine all dressing ingredients. Whisk or shake vigorously until combined. Set aside.
  2. Prepare all salad ingredients & gently toss.
  3. Just prior to serving,gently pour dressing on salad, without drenching. You may have leftover dressing (perfect for tomorrow!).
  4. Enjoy!

This recipe is great for company, but is easy enough for everyday lunch too!
