I wasn’t joking around when I said it’s sandwich season!

The school year just started, which means you’re fresh full of ideas for lunch… right?!

Well, in case you need some inspiration, I’m SO excited to share one of my personal go-to favorites…

I first made this combo back in the spring, but it’s been lurking in the back of my head to share with you for a looooong time coming!

Sandwiches are possibly one of the most satisfying lunch options available.

While I love me a yummy salad, sandwiches also remind me of being a KID… and who doesn’t want a #ThrowbackThursday moment any day of the week?

Sandwiches are also a great way to pack in great nutrition… but I find many people don’t take advantage of all a sandwich has to offer!

It starts with the bread…

I prefer a 100% whole grain bread with ingredients you can recognize.

The ingredient list shouldn’t be too long, and should always start with “100% whole grain flour” or “100% whole wheat flour” first.

Whole grain bread has more FIBER that will keep you full for hours. And yes, kids need fiber too:

  • Kids 4-8 years old should eat 25 grams/day
  • Girls >9 years old should eat 26 grams/day
  • Boys 9-13 require 31 grams/day and 14-18, 38 grams/day

Then you need to FILL your sammie…

Your fillings should include 3 things:

  1. Some PROTEIN
  2. A little bit of FAT
  3. Added VEGGIES or FRUIT (bonus points for both!)

This sandwich contains:

  • Organic SunButter
  • Avocado
  • Banana

I chose Organic SunButter for this sandwich because it’s made with just 1 ingredient and suuuuper creamy: organic roasted sunflower seeds. Although any SunButter variety you have on hand will definitely be delicious!

For 1 tablespoon of Organic SunButter, you’ll receive 5% of your daily iron needs, some calcium, plant-based protein, and heart-healthy fats.

Paired with a high quality sprouted grain bread, this sandwich clocks in at 12 grams of plant-based protein, which is great for lunch!

Plus, creamy avocado will keep you full for HOURS, thanks to heart-healthy fats.

Aaand I’m rounding out the fillings with BANANA. Just a few slices provide the perfect hint of sweetness!

It’s really such a delicious combo, I feel bad I haven’t shared it earlier!

SunButter, Banana, and Avocado Sandwich

Ingredients

Scale
  • 2 slices whole grain bread (gluten free, if needed)
  • 1/2 avocado, mashed
  • 1/4 banana, sliced
  • Generous pinch of sea salt
  • 1 heaping tablespoon Organic SunButter (or your favorite variety)

Instructions

  1. Lay slices of bread flat on your counter.
  2. Spoon mashed avocado on 1 slice of bread.  
  3. Place the banana slices on top of the avocado. Sprinkle with sea salt.
  4. Then use a knife to spread SunButter on the other slice of bread.
  5. Place the SunButter slice (SunButter face down) on top of the avocado banana slice.
  6. Cut in half and enjoy!
