I don’t know about you, but I’ve been 100% falling in love with fall! Crunchy leaves, crisp air when I walk out of dance class (because let me tell you, leaving an hour long dance cardio class and walking into NYC humidity is n-o-t fun!), and so many delicious fall foods — have you tried my acorn squash wedge salad yet?!

Fall also happens to be BIRTHDAY season ’round here and this year is a very special year as my older brother, mom and grandma are all celebrating very special birthdays! We kicked things off in October with my brother’s 30th and today is my mama’s birthday, so a very public HAPPY BIRTHDAY MOM…the one who inspires me everyday, especially in the kitchen…

I’m jumping riiiight into this week’s eats because, well, with the holidays right around the corner, we could all use a little healthy eating inspo ((myself included!!)). I know I’ve been trying to make sure my diet is cleaner than usual and full of vitamins, antioxidants, probiotics, and all the other good jazz so that I stay healthy through this seasonal transition and before the holiday season.

I woke up in a political hangover on Wednesday morning and honestly didn’t have too much of an appetite. But I was craving a smoothie for the first time in FOR-EV-ER, so I listened to my body and went with it.

I had my classic allergy-friendly green monster smoothie… 1/2 banana, baby spinach, sunflower seed butter, and unsweetened soymilk (pictured above) and my probiotics, a shot of apple cider vinegar, black coffee, and filled up my first water bottle of the day.

For those of you who ask, I swear by VSL#3 probiotics!

I got some work done at Starbucks (holiday cups are here!) and snacked on a gingerbread energy bite (recipe coming soon!) with my black coffee…

I came home, made the wild bloob bars I shared on Friday, felt totally defeated that they weren’t going to work, but then I stuck ‘em in the fridge and voila, they worked!!

So I shot a bunch of photos for my bars and then made a salad for lunch with just about everything I had in the fridge…

Chopped veggies with some quinoa over spinach, chopped pear, a hard boiled egg white, avocado and some homemade hummus that I now prep every single week.

I did some more work throughout the rest of the afternoon, then had a snack mid-afternoon…

A corn thin with sunflower seed butter, banana slices, pepitas and dark chocolate chips with a cup of tea and more water.

Then right before I headed out the door for my workout I had a bite of my bloob bars#werkperks! Let’s just say that the picture was not worth 1,000 words, so I’ll leave you with this bite…

I walked uptown to my dance cardio class. Although I find exercise a stress relief, many other people didn’t see it that way and curled up with a pint of Ben & Jerry’s in their jammies on the couch ((or so I assume)), so my class was mostly empty (which I am not a fan of!). Womp womp. At least I felt better after sweating it out!

Then I walked back downtown to meet a friend for a quick dinner and my new favorite neighborhood spot, Cava. I got a bowl full of deliciousness — greens, black lentils, roasted veggies, chopped Israeli salad, banana peppers, olives and feta. SO GOOD.

Once I got home, showered, and relaxed on the couch I had a handful of grapes (my favorite late night snack, not pictured!) and called it a day! Luckily, by this week, New York City (like always) has bounced back and is stronger than ever. I was so inspired by all of the peaceful demonstrations over the past week, so I wanted to share a shot of something we can ((hopefully)) all agree on…
